Pulque is a pre-Hispanic alcoholic beverage made from the fermented juice of the maguey, which can be mixed with fruits, cereals, vegetables, etc. There are indications that it exists since the fifth century before Christ. The Aztecs perforated and scratched the heart of the maguey to extract the mead with which the pulque is made. Since then, the drink, of slightly slimy texture, has become the favorite drink of many Mexicans, and with sauces and tortillas can even be their daily main meal.
